I love being alone. Tonight, I am spending time baking, blogging, crafting, and reflecting on all I am thankful for. Hallmark movies are on as I go about my activities. Today in itself was filled with things to be thankful for. I had lunch and meaningful conversation with a girlfriend at PF Changs and spent the rest of the day with sweet JH. And now I am thankful for a period of solitude. Night time is good for that.
Pumpkin Pecan bars are baking in the oven at this very minute, and my apartment is filled with the aroma of pumpkin, cinnamon, and cake.
Side note: As much as I love to bake, it can be stressful. To reduce unnecessary stress, I have all my ingredients out, ready, and measured before I begin. I also take my eggs out early so that they will be room temperature by the time I bake. Just works better that way.
JH came over for most of the afternoon. I love giving presents and surprises, and more often than not I have a little something for him. Today, it was....
ICE CREAM! Not just any ice cream, but Pumpkin and Peppermint ice cream. I was in Harris Teeter the other day, and the Pumpkin ice cream caught my eye. I was so excited until I noticed the Peppermint ice cream staring sadly at me. The thing is, JH doesn't like pumpkin. He's weird. I know. I've tried and tried to win him over to team pumpkin this fall. I failed. The other day he asked me when I was going to begin baking "peppermint stuff." Anyway, I just could not bring myself to buy the Pumpkin without the Peppermint. Of course, as soon as he saw his present, he wanted a bowl. With chocolate syrup. SPOILED ROTTEN. And I'm OK with that, because I'm really thankful for him.

The list could go on for pages. Thank you, God, for all of my blessings...I love Him so! Happy Thanksgiving!
